• Lemon juice — Freshly squeezed at the bar. Brought to the Mediterranean along Arab trade routes, the lemon is one of the Riviera's prides, from Menton to the hills of Grasse. Freshness, tension and a lively mouthfeel.
• Simple syrup — Equal parts sugar and water: the liquid sugar of every bartender in the world. Roundness, without any distracting flavour.
• Fresh mint — Spearmint, the herb of Havana's Mojitos. A cool, green, minty breeze.
• Perrier — Naturally sparkling mineral water from Vergèze, in the south of France. Fine bubbles and plenty of lightness.
